No-Bake Peanut Butter Chocolate Chex Cups

If you’re looking for a simple, healthier sweet and salty treat for your kiddos, yourself, or to bring to a neighbor, this is it!! Is there a better combination than peanut butter and chocolate? I honestly don’t think so! These tasty Chex cups are also gluten and dairy-free!


Peanut Butter Chocolate Chex Cups

Ingredients

  • 1 Cup Natural Peanut Butter

  • 6 Tbsp Raw Honey

  • ½ tsp Sea Salt

  • 1 tsp Vanilla Extract

  • 3 cups Rice Chex cereal

  • Cooking spray (I use Chosen Foods Avocado Oil Spray)

  • 1/2 Tbsp Coconut Oil

  • 1 ½ Cups Enjoy Life Semisweet Chocolate Chips

Directions

1. In a medium-sized pot over medium heat, combine the peanut butter, honey, vanilla, and ½ teaspoon sea salt. When it’s warmed through and well combined, remove from heat and stir in Chex cereal.

2. Lightly spray muffin tin liners with cooking spray, and place them in a muffin tin.

3. Divide the mixture between muffin cups and lightly press down so that it’s firm in place.

4. Melt chocolate chips with coconut oil in the microwave or on the stovetop, however you’d prefer, then divide melted chocolate between muffin cups and sprinkle with remaining sea salt.

6. Refrigerate until the chocolate is completely cooled and enjoy! Cover and store Chex cups in the refrigerator for up to one week. Take them out 10 minutes before you are ready to serve to ensure they aren't too crunchy! They will soften up at room temp.
